People eat chicken soup for two reasons: it’s either winter or they’re sick. Probably the reason why we turn to chicken soup every time we’re sick is because we’re used to seeing our parents prepare it for us when we were little kids. The healing formula of chicken soup is “comforting thought of parents” + “placebo effect?” + “actual health benefits.” Remember getting well fast after mom chants her soup will make you better even though it’s just a simple broth? That means you had a positive placebo effect but I won’t tap into this subject. Instead, I want to clarify something with the role of eating chicken soup to fighting the common cold.
The question: Does chicken soup really cure the common cold? There are 2 answers: “No… But” and “Yes… But”. Sounds weird right? Let me put some sense to it.
No. There is no cure for the common cold. But there is a way to reduce the duration of colds slightly. Some people could get sick for possibly up to a week when they catch a cold or flu so if “reduce the duration of colds slightly” means a day or two of freedom from misery, I’d eat a bowl. Aside from the nutritional value of the ingredients used in the soup, having soup as your meal hydrates you. When you are sick, specially if you have runny nose, a feverish sweat, experience vomiting or have diarrhea, you lose body fluids and it just makes sense to hydrate yourself. Sipping warm liquids also eases congestion and increase mucus flow. Bowl bottoms up!
Yes. There was a study more than a decade ago conducted by Dr. Stephen Rennard, of the University of Nebraska Medical Center, Omaha. In this study, he investigated why his wife’s chicken soup recipe, which was handed down through generations, has healing properties. Using blood samples of volunteers, he concluded that the soup inhibited the movement of neutrophils (the most common infection-fighting white blood cells) and this restriction in movement helps reduce upper respiratory cold symptoms. But this is all a theory and he couldn’t exactly point out how the soup does that.
Paleo Chicken Soup Recipe
For 8 – 10 servings, you will need:
- 3 lbs. chicken meat cut to your preference
- 6 cups water
- 4 cups chicken broth (organic)
- 1/2 cup chopped onion
- 3 cups chopped carrots
- 3 cups chopped celery
- 1 tsp. grated ginger
- 8 minced garlic cloves
- 1 tsp ground turmeric
- 1/2 tbsp basil
- 1/2 tbsp parsley
- 1 tsp fish sauce (optional)
- 2-3 tbsps olive oil
- salt and pepper to taste
- Cook your chicken. You can stir fry them with a little oil, grill them, etc. but personally, I prefer boiling my meat.
- In a large pot, pour in olive oil, then add in the onions, carrots and celery. Cook together until carrots are slightly tender. Add in ginger, garlic, turmeric and if you want to add another vegetable (ex. cauliflower and asparagus) or ingredient, go ahead.
- Once the carrots are slightly tender, pour in 6 cups of water and 4 cups broth in your pot. Bring to a boil then reduce the heat and let it cook covered for about 10 minutes with occasional stirring or until vegetables are tender.
- Finally, add in your chicken, basil and parsley. Stir for about 2 minutes to incorporate all the flavors.
